What a lame question that keeps coming up.
It's simply because of stupid petty little fights between developers, forking when they throw a tantrum, and the entire UI is a disaster and different across every app which re-invents the wheel.
i.e. the only good open source project I know of is Mozilla, because they have a governing structure and excellent project management overlooking everything. Ubuntu comes some-what close to this, and thus the reason it's the most popular dist.
And for countless other reasons, simply watch the "why linux sucks" talks by Bryan Lunduke: -
Oh, and because there's no central and good overlooking management behind Linux, every dev acts like a 15 year-old kid throwing tantrums every few days over some small issue because he doesn't get his way.
And because they act like 15-year-olds, they can't accept any criticism from OSX / Windows users.
